cream cheese chicken roll ups by J. Allen

ingredients:
4 chix breasts
8oz. cream cheese softened
4 green onions
4 slices of bacon

directions:preheat oven to 375. pound chix breasts to 1/4". mix cream cheese and green onions in a small bowl. spread cream cheese mix on chix and roll it up. then wrap bacon around the chix. bake for 35-45 mins.

yum! perfect for a dinner date or having company. SO easy - took 5 minutes to make and looks fancy when it's done. Serve w/ red roasted potatoes. This dish is delish. Thanks, Jo.

oh, and I also did 2 things different. I butterfly-ed 1 breast and then pounded (got 1 meal for the family out of 1 costco breast) AND I add 2 strips of bacon around the meat. Cris-crossed to hold the meat together OR you could cross it too. Kind of stretched out the bacon strip so I could get more length and wrap it more. yum.
